I love trying local food. What are the must-try Egyptian dishes, and how do I eat street food safely?

Start with koshari (rice, pasta, lentils, chickpeas and crispy onions in tomato sauce) — Egypt's beloved comfort dish. Also try ful and taameya (fava beans and Egyptian falafel) for breakfast, hawawshi (spiced meat in bread), and molokhia. For safety, pick busy stalls with high turnover so the food is fresh, choose hot, freshly-cooked items, drink bottled water, and ease into street food over the first day or two. Popular sit-down koshari chains are a reliable, clean starting point.

Koshari was my favourite of the whole trip, and cheap too. Busy local spots were totally fine for my stomach.
